2 cups Yellow split peas or green split peas, rinsed & drained
1-2 lbs Beef bones ham bone, or any soup bones
1 Onion large, chopped
2 Carrots large, chopped
3 stalks Celery large, chopped
1 tbsp Nut oil
8 cups Water
2 Bay leaf
5 Black peppercorns
1 tsp Salt
Black pepper to taste
1 tsp Smoked Paprika
Green onion dill or parsley, for garnish

This Ukrainian Split Pea Soup is a delicious combination of tender split peas, smoked beef bone, and vegetables. It is packed full of flavor and is a hearty and filling soup to have after a long walk on the beach or in the woods!

Start by sauteing onion, carrots, and celery in oil, stirring occasionally. Add bones/meat (if using), water, bay leaves, and peppercorns. Bring the soup to a boil and skim any foam from the top using a mesh strainer. Add the split peas and salt. Bring the soup to a boil before reducing to low and cooking until the peas are soft and partially broken down. Season the soup with pepper. Serve hot, garnished with green onion, dill, or parsley.

Steps to make Ukrainian Split Pea Soup

Place a large saucepan or Dutch oven over medium heat and add 1 tablespoon of oil.

Saute onion, carrots, and celery

Saute 1 large finely chopped onion, 2 large chopped carrots, and 3 large chopped celery stalks for 5 minutes.

Add bones, water, bay leaves, and peppercorns

Add 1-2 pounds of ham bone, 8 cups water, 2 bay leaves, and 5 peppercorns. Bring to a boil, skimming any foam from the top.

Add 2 cups of split peas and season with salt to taste.

Boil and simmer

Bring the soup to a boil. Once boiling, reduce the heat and simmer on low for 1 - 1 ½ hours, until the split peas are tender.
