Who doesn’t love fresh and fruity jello on a hot summer day? This Vegan Watermelon Jello is a fantastic recipe if you are in the mood for jello. Many vegans are wary of jello because it is often made using gelatin but this jello is different because it uses agar-agar which is a plant-based gelatin substance from seaweed.
Bring strained watermelon juice and agar-agar to a boil in a saucepan. If you are using sugar, add it and wait for it to dissolve. Once the agar-agar has dissolved fully, switch off the heat. Pour the mixture into small jars or a mold of your choice. Let the mixture cool down to room temperature before placing the jar in the refrigerator to chill and set.
