To make this Vegetable Beef Casserole, you will need the following ingredients:
Preheat the oven to 400 °F.
In a 3-quart casserole dish, layer half the potatoes, carrots, celery, beans, and onion.
Crumble and evenly spread half the uncooked ground beef over vegetables. Season with half a teaspoon each thyme, salt, and black pepper and repeat the layers.
Top with 4 peeled, seeded and chopped tomatoes.
Cover and bake at 400 °F for the first 15 minutes, then reduce heat to 350 °F and bake for 1 hour or until meat is no longer pink and vegetables are tender.
Sprinkle with 1 cup of shredded Cheddar cheese. Cover and let stand until the cheese is melted.
