These Waldorf Turkey Pitas are a super quick and easy lunch recipe which is healthy too! If there’s a nicer sandwich filling than Waldorf salad, then I’d love to hear it! My personal favorite is this combination of celery, grapes, apple and cooked turkey breast. Try it soon!

In a large bowl, make the pita filling by combining cooked turkey breast with celery ribs, a tart apple, seedless halved red grapes, mayo and diced mozzarella cheese. Cut pita pockets in half and line each half with baby spinach leaves. Fill each of the pitas with the turkey mixture and enjoy.

Steps to make Waldorf Turkey Pitas

Prepare pita filling

Combine 2 cups of cubed cooked turkey breast, 2 finely chopped celery ribs, 1 diced medium tart apple, 1 cup of seedless red grape halves, ½ a cup of fat-free mayo and 2 ounces of diced fresh mozzarella cheese.

Cut pitas in half

Slice each of the pita pockets in half.

Line pitas with spinach leaves

Line each of the pita halves with spinach leaves.

Fill the pitas

Divide the filling between each of the pita pockets.

Serve

Serve for lunch and enjoy!
