1 Watermelon medium, cubed
1 tbsp Olive oil extra-virgin
1 pinch Sea salt fine
⅓ cup Almonds slivered almonds, toasted
⅓ cup Feta cheese
¼ Red onion small, finely sliced
1–2 tbsp Fresh mint chopped or chiffonade
4 strips Bacon cooked, chopped, optional
For dressing:
¼ cup Basil fresh, not packed
2 tbsp Water
1 tbsp Honey or maple syrup
½ tsp Ginger grated

To make this delicious watermelon salad, start by drizzling watermelon with olive oil in a large bowl. Toast almonds and cook bacon if using. Assemble the salad by placing sliced onion, bacon, feta, almonds, and mint leaves in the bowl with the watermelon. Whizz basil, water, honey, and ginger in a blender and drizzle over the salad. Yum!

Steps to make Watermelon Salad with Basil-Ginger Dressing

Drizzle watermelon with olive oil and sea salt

Place 1 cubed watermelon in a large salad bowl. Drizzle with 1 tablespoon of olive oil and sprinkle with a pinch of sea salt.

Toast almonds

Place a small skillet over medium-low heat. Add ⅓ cup of almonds and toast until golden but not burnt. Remove from the heat and leave to cool.

Cook bacon

If using bacon, cook using your favorite method and leave to cool.

Assemble salad

Add ¼ sliced onion, cooked bacon, ⅓ cup of feta, toasted almonds and 1-2 tablespoons of mint leaves to the bowl with the watermelon.

Make dressing

Place ¼ cup of fresh basil in a blender with 2 tablespoons of water, 1 tablespoon of honey, ½ teaspoon of grated ginger. Blend until smooth.
