Wild Garlic & Nettle Soup

When I found a patch of wild garlic growing in my local park recently, I knew I had to make Wild Garlic & Nettle Soup. This is one of my favorite recipes from my childhood. I used to forage for nettles and wild garlic with my father in the fields behind our house. He’d wear thick gloves and pick the nettles and I would pluck the more delicate wild garlic leaves and flowers. We’d bring back our bounty and set about making nettle and wild garlic soup together.

And this is one of the best nettle and wild garlic soup recipes I have come across. It’s really easy to make too. Start by sautéing the onion, leek, celery, carrot, potato until softened. Add stock and simmer before adding the nettles and wild garlic in batches. Blend the soup before pouring in milk for creaminess. Serve with my Wild Nettle Bread rolls.

To make the Wild Garlic & Nettle Soup, you will need the following ingredients:

Used soy milk instead of normal milk and it actually went really well with everything.

This is even better if you chop up some chicken breast and toss it in there, it can be a full lunch :)

This is like a resturant served soup that I managed to make in my own household, just perfection.

Kinda grainy in my opinion but it wasn't too bad or anything, just had it with some white bread.
