When I found a patch of wild garlic growing in my local park recently, I knew I had to make Wild Garlic & Nettle Soup. This is one of my favorite recipes from my childhood. I used to forage for nettles and wild garlic with my father in the fields behind our house. He’d wear thick gloves and pick the nettles and I would pluck the more delicate wild garlic leaves and flowers. We’d bring back our bounty and set about making nettle and wild garlic soup together.
And this is one of the best nettle and wild garlic soup recipes I have come across. It’s really easy to make too. Start by sautéing the onion, leek, celery, carrot, potato until softened. Add stock and simmer before adding the nettles and wild garlic in batches. Blend the soup before pouring in milk for creaminess. Serve with my Wild Nettle Bread rolls.
To make the Wild Garlic & Nettle Soup, you will need the following ingredients:
Place 1 tablespoon of oil and 25 grams of butter in a large pot and heat until melted.
Place 1 diced onion, 1 sliced leek, 2 celery stalks, 1 carrot and one small chopped potato in the pot with a good pinch of salt. Stir to mix. Cover the pot and sauté the mixture for 15 minutes, stirring occasionally.
Pour in 1.2 liters of stock and simmer for 10 minutes.
Add the nettle leaves in batches, stirring between additions. Add the wild garlic leaves and simmer for a further two minutes.
Remove the soup from the heat and blend until smooth.
Return the pot to the heat and pour in 3 tablespoons of milk. Stir to combine and taste. Adjust the seasoning.
Place the soup in large bowls and drizzle with extra oil. Sprinkle some wild garlic flowers on top, if you have them. Serve with olive oil and some edible wild garlic flowers on top.
