This Zucchini Pizza Casserole is a fantastic zucchini beef casserole which your whole family will love! It’s so versatile too – you can easily sub in Italian sausage or ground turkey for the beef or make it vegetarian by skipping the meat and adding mushrooms, broccoli, or finely chopped cauliflower.
Place zucchini in a colander and sprinkle with salt. Let stand for 10 minutes before squeezing out excess moisture. Combine zucchini with eggs, Parmesan, and half the mozzarella and Cheddar cheeses. Transfer the mixture to a baking dish and bake. As the zucchini bakes, cook beef and onion over medium heat until meat is no longer pink. Drain excess fat and add tomato sauce. Spoon over the zucchini mixture and sprinkle with the remaining cheeses. Add a sprinkle of chopped green pepper and bake until heated through.
To make Zucchini Pizza Casserole, you will need the following ingredients:
Preheat the oven to 400° F and grease a 13x9-inch or 3-quart baking dish.
Place 4 cups of zucchini in a colander and sprinkle with salt. Leave to stand for 10 minutes before squeezing out excess moisture.
Combine zucchini with 2 eggs, ½ cup of Parmesan, and 1 cup of mozzarella, and ½ a cup of Cheddar cheese.
Transfer the zucchini mixture to the prepared baking dish.
Bake in the oven for 20 minutes.
Place 1 pound of beef and ½ cup of chopped onion in a large saucepan and cook over medium heat until no pinkness remains. Crumble the meat as it cooks.
Drain fat from the meat.
Add 1 can of tomato sauce to the beef mixture and spoon over the zucchini mixture.
Sprinkle with the remaining mozzarella and Cheddar and add 1 medium chopped green pepper.
Bake for 20 minutes.
