To make the 30-Minute Roasted Sweet Potato Salad, you will need the following ingredients:
Preheat the oven to 400 °F and line a rimmed baking sheet with parchment paper.
To a large bowl, add the diced sweet potatoes, 2 tablespoons olive oil, and ½ teaspoon salt and toss to coat well.
Spread the sweet potatoes on the prepared baking sheet and roast on a center rack for 10 to 20 minutes. Once roasted, remove from the oven and set aside to cool.
