These Apricot-Glazed Drumsticks with Broccoli are one of my favorite ways to cook chicken drumsticks. Sweet and sticky, this chicken truly is finger-licking good! The glaze is simple, made with apricot jam.
To make this dish, start by placing the chicken on a sheet pan. Drizzle with olive oil and season all over. Spread the drumsticks in an even layer and cook in the oven. As the chicken cooks, prepare the glaze by mixing jam, lemon juice and zest. Remove the chicken from the oven and brush glaze all over. Broil the chicken for 3 to 5 minutes but be careful not to burn the glaze. Cook broccoli in a large pan of salted water. Serve chicken with broccoli and garnish with cilantro. Yum!
To make Apricot-Glazed Drumsticks with Broccoli, you will need the following ingredients:
Preheat the oven to 450 °F. Line a rimmed baking sheet with parchment paper.
Place the drumsticks on the sheet pan. Drizzle with 2 tablespoons extra virgin olive oil and massage well. Season the drumsticks all over with salt and pepper.
Spread the drumstick out in an even layer and roast for 25 minutes until the internal temperature is 165 °F.
Combine ½ a cup of apricot jam with the juice and zest of ½ a lemon in a small mixing bowl.
Remove the chicken drumstick from the oven and brush all over with glaze.
Heat the broiler and broil the drumsticks for 3-5 minutes until the skin is crisp but take care that the glaze doesn’t burn.
Bring a large saucepan of salted water to a boil. Add 1 pound of broccoli florets and cook for 3-4 minutes, then drain.
Serve these drumsticks with broccoli, garnished with cilantro.
