Avocado Grapefruit Salad

Grapefruits are not only for breakfast. Make this Avocado Grapefruit Salad and enjoy your favorite fruit in a whole new way! Tart and juicy grapefruit, rich and creamy avocados, and crunchy almonds over a bed of mixed greens. All tossed together with a tangy and sweet homemade vinaigrette for a salad that is beyond simple to put together. Healthy and delicious, this is a perfect salad I look forward to in the fall and winter months.

Start with the grapefruit. Cut off the top and bottom of the grapefruit. Stand it up on a flat end and cut away the peel and the white pith on the sides, following the curve of the grapefruit. Run a knife along the inside of the membranes, cutting the fleshy part out as you go. Now you have segmented your grapefruit. Next, toss the greens (feel free to use any greens of your choice) with the grapefruit segments, avocado, and almonds. Then mix the vinaigrette. This vinaigrette is a mix of extra-virgin olive oil, champagne vinegar, and honey, plus a pinch of salt and freshly ground black pepper. To keep the recipe vegan, sub maple or agave syrup for honey. Drizzle the vinaigrette over the salad and toss to coat. Serve immediately and enjoy!
