My Baked Fish Subs are the ultimate fish burger! No frozen breaded fish in this recipe! I bake fresh fillets of cod in butter, garlic and lemon juice until they are so soft and juicy they would melt-in-the-mouth. Add the best of condiments – Ranch dressing and steak sauce – to freshly toasted buns, slide in the buttery fish fillets, top with crispy onion rings and fresh lettuce, and you have an incredible fish fillet sandwich!
This recipe makes 4 subs but you can easily multiply the quantities up to feed a crowd. These subs are the perfect option for pescatarians at a BBQ or picnic, although I wouldn’t be surprised if everyone wants to try one!
To make Baked Fish Subs, you will need the following ingredients:
Preheat the oven to 350°F. Lightly butter a shallow baking dish.
Lay the fillets in the baking dish and sprinkle the garlic over the top. Pour over the lemon juice and place chunks of the butter here and there.
Bake for 20 to 25 minutes in the preheated oven, until the fish flakes easily with a fork.
While the fish is baking, heat the oil in a large pan placed over a medium heat. Add the onion rings and fry gently until golden.
Spread 1/2 a tablespoon of steak sauce on the cut side of the bottom half of a bun. Lay a couple of the fillets on top, then spread over 1/2 a tablespoon of the ranch dressing. Place 1-2 lettuce leaves on top, then cover with the top half of the bun. Repeat with the other 3 buns and serve.
Serve on their own or with a fresh green salad and a side of fries!
