This recipe is one of my favorite easy dessert recipes because it has only 3 main ingredients and takes about 10 minutes to make. Plus, it looks stunningly beautiful and tastes incredibly rich for something so simple and light. The hardest part of this recipe is waiting for the cake to freeze before you can eat it, but it’s worth it! Decorate with extra berries, shaved white chocolate, and dust with confectioners’ sugar before serving, and enjoy!
To make this Low-Fat Berry and Meringue Ice Cream Cake, you will need the following ingredients:
Grease a 9-inch round springform pan and line the bottom and sides with parchment paper.
Place 68 fluid ounces of ice cream in a large bowl and let stand until just starting to soften, about 10 minutes. Add 17 ounces mixed berries and 4 ounces crushed meringue cookies and stir well to combine.
Spoon the ice cream mixture into the prepared pan and smooth the top.
Cover the surface with plastic wrap and freeze for 6 hours or overnight or until firm.
Remove the ice cream cake from the pan and transfer to a platter. Top with extra berries and chocolate curls if you wish.
Serve immediately dusted with confectioners’ sugar.
