This Best Healthy Coleslaw Ever (No Mayo) is the best vegan coleslaw recipe ever. I love the combination of red cabbage, carrots and cilantro with a slight kick from jalapeño. The tangy dressing doesn’t contain any mayo making this a vegan delight!
To make this, place shredded fresh red cabbage, carrots, cilantro, green onion, and jalapeño in a large bowl. Make a dressing from olive oil, cider vinegar, maple syrup, garlic salt, and pepper. Pour the dressing over the veggies and place in the refrigerator to chill. Toast pepitas and sliced almonds and mix them through the slaw just before you’re ready to serve.
To make my Best Healthy Coleslaw Ever (No Mayo), you will need the following ingredients:
Place ½ a medium head of shredded red cabbage and ½ a medium head of shredded green cabbage in a large salad bowl with 2 heaping cups of shredded carrots, 1 cup of finely chopped cilantro, 1 seeded and finely diced jalapeño and ½ a cup of green onion. Mix well to combine.
Combine 3 tablespoons of extra virgin olive oil with 2 tablespoons of apple cider vinegar, 1-2 tablespoons of pure maple syrup, 1 finely minced clove garlic, ¼ teaspoon of cayenne pepper and ½ a teaspoon of salt and freshly cracked black pepper.
Pour the dressing over the coleslaw and toss well to combine.
Cover the bowl and place in the refrigerator for at least an hour to allow flavors to marinate together.
Place ½ cup pepitas and ¼ cup toasted sliced almonds on a dry pan to toast them.
Just before serving, sprinkle with toasted sliced almonds and pepitas; toss again and serve.
