I start by cooking rice in broth until tender. As the rice cooks, sauté onion and celery in butter until tender. Add rice, mushrooms, parsley, poultry seasoning, salt, pepper, and the remaining broth. Pour the mixture into a greased casserole dish and bake for about 30 minutes. Serve garnished with sage and thyme.
To make Rice Dressing, you will need the following ingredients:
Preheat the oven to 350 °F and lightly grease a 13x9-inch casserole dish.
Place 1½ cups of rice in a saucepan with 3½ cups of broth. Bring the rice to a boil. Reduce the heat and cover. Simmer for about 20 minutes until tender.
Sauté 2 cups of chopped onion and 2 cups of chopped celery in ½ a cup of butter until tender.
Add the cooked rice and stir in 2 cans of mushrooms, 3 tablespoons of minced fresh parsley, 1½-2 teaspoons poultry seasoning, ¾ teaspoon of salt, ½ a teaspoon of pepper and the remaining broth.
Transfer the rice dressing to the casserole dish. Place in the oven and bake uncovered for about 30 minutes.
Serve garnished with fresh sage and thyme.
