For the Sweet Potatoes:
4 cups Sweet potatoes cubed
2 tbsp Olive oil
½ tsp Sea salt
¼ tsp Black pepper
1 clove Garlic minced or crushed
For the Brussels Sprouts:
2 cups Brussels sprouts halved
2 tbsp Olive oil
¼ tsp Sea salt
1 clove Garlic minced or crushed

Preheat oven and prepare baking sheet

Preheat the oven to 400 ºF and line a baking sheet with baking parchment paper or spray with cooking oil.

Prepare blackened seasoning

In a small mixing bowl, combine 2 teaspoons Italian seasoning, ½ teaspoon black pepper, ½ teaspoon sea salt, ½ teaspoon paprika, ½ teaspoon cumin, ½ teaspoon cayenne, ½ teaspoon cane sugar and ¼ teaspoon garlic powder.

Season chicken

Transfer chicken breasts to the lined baking sheet and season with sprinkles of the prepared blackened seasoning. Coat both sides.

Spread sweet potatoes and Brussels sprouts around the chicken breasts and drizzle with 4 tablespoons of olive oil.

Season sweet potatoes with ½ teaspoon sea salt, ¼ teaspoon black pepper and 1 clove minced garlic.
