The BLT sandwich is a classic for a reason: crispy lettuce leaves, juicy tomato slices, and crisp bacon sandwiched between toasted bread slathered with mayo. This delicious salad has, too, all that we love about the American staple and takes just minutes to prepare. So why not think outside the sandwich bread and add more veggies to your diet? That’s never a bad thing!

This salad takes less than 10 minutes to prepare. You can prep the ingredients ahead and just throw the salad together at the last minute. Combine the coarsely chopped spinach, broccoli florets, halved grape tomatoes, and bacon pieces in a large salad bowl. Whisk together the dressing ingredients. Just before serving, toss the salad with the prepared dressing. Enjoy!
