These Buttermilk and Honey Chicken Kabobs are one of the best Valentine’s Day dinner ideas I think. They are simple to prepare and cook which makes them an easy, romantic dinner. Serve these kabobs with a fresh green salad or roasted potato cubes.
To make these kabobs, start by preparing a buttermilk marinade. Place the buttermilk mixture and chicken in a large zip-lock bag. Seal the bag and chill in the refrigerator for 3 hours. Remove the chicken from the marinade and discard the excess marinade. Thread the chicken onto skewers. My top tip when preparing kabobs is to leave ⅛-inch space between each of the pieces of meat. Grill for 6 to 8 minutes on each side with a lid on, until the chicken is done. Serve with lemon halves and your favorite dipping sauce.
To make the Buttermilk and Honey Chicken Kabobs, you will need the following ingredients:
Combine ¼ cup hot sauce, ¼ cup of tomato paste, and 3 tablespoons of honey in a large bowl and whisk until smooth. Blend in 1 cup of buttermilk, ½ a grated small sweet onion, 6 minced garlic cloves, 1 tablespoon of cracked black pepper and 2 teaspoons of salt.
In a large zip-lock bag, mix the chicken cubes with the marinade. Seal and leave to marinate in the refrigerator for at least 3 hours.
Place 10 wooden skewers in water and soak for at least 30 minutes.
Spray the cold cooking grate of a grill with cooking spray. Place the grate on the grill and preheat to medium-high heat (350 - 400 °F).
Thread the chicken onto the skewers until all the meat is used. Discard any remaining marinade. Season with the remaining ¼ teaspoon of salt.
Place the kabobs on the grill. Cover with a lid and cook over low heat for 6-8 minutes minutes on each side.
Serve with lemon halves and your favorite dipping sauce!
