1 Summer squash medium, or zucchini, halved lengthwise and sliced
1 Yellow bell pepper chopped into 1-inch pieces
1 Red onion thinly sliced into wedges
1 pt Cherry tomatoes
½ cup Kalamata olives pitted
¼ cup Feta cheese
2 tbsp Parsley fresh, finely chopped

Preheat the oven to 425 °F.

In a small bowl, whisk together ½ cup olive oil, 3 tablespoons lemon juice, 4 minced garlic cloves, 2 teaspoons dried oregano, 1 teaspoon dried thyme, 1 teaspoon Dijon mustard, 1 teaspoon kosher salt, and ½ teaspoon freshly ground black pepper.

Marinade chicken

Use a paper towel to pat 6 chicken thighs dry and place them in a large bowl. Pour ⅔ of the prepared lemon-herb marinade on top. Using your hands, toss the chicken in the marinade to coat well. Set aside to marinate for 15 minutes.

Place vegetables onto baking sheet

In the meantime, spread 1 sliced summer squash, 1 sliced bell pepper, 1 sliced red onion, and 1 pint cherry tomatoes onto the baking sheet and drizzle the remaining marinade on top. Toss to coat the vegetables well.

Add chicken

Add the chicken thighs to the baking sheet, skin-side up.

Roast

Roast for 25 minutes. Remove the baking sheet from the oven, scatter ½ cup Kalamata olives and ¼ cup feta around the chicken, and then place it back in the oven for another 6 to 10 minutes, or until the chicken is cooked through to 165 °F.
