Ingredients

For salad
2 lb medium Eggplants cut lengthwise into 1/2" thick slices
¼ cup Olive oil extra-virgin
1 tsp Ground coriander
1 tsp Cayenne pepper ground
Salt to taste
1 ½ cups Cherry tomatoes or grape ,multi color, halved
For dressing
¼ cup packed Fresh mint leaves, finely chopped
3 small Chili pepper fresh red Fresno chilis or other hot chilis, finely chopped
2 tbsp Lemon juice
2 tbsp Red wine vinegar
3 tbsp Olive oil extra-virgin
¼ cup Greek yogurt
2 tbsp Milk
Fresh mint to garnish

This Cayenne Grilled Eggplant with Fresh Tomato Salad tastes soooooo good, you will be looking for excuses to make it! Eggplant is one of those vegetables: it’s super versatile. It carries flavors well and it tastes wonderful when it is grilled with smokey char lines. I love to experiment with eggplant and different flavor combinations – and I find that this one really works well!

In this recipe, I combine the grilled eggplant with tomatoes dressed in a mint leaf, chili and lemon juice vinaigrette. I use one of my favorite serving platters to assemble this really delicious and healthy salad. Just before I bring this to the table, I drizzle some yoghurt on top and sprinkle with fresh mint leaves. If I want to make this vegan, I simply omit the yoghurt drizzle – it still tastes absolutely amazing!

Steps to make Cayenne Grilled Eggplant with Fresh Tomato Salad

Heat the grill

Preheat the grill to medium.

Brush the eggplant with olive oil

Take the ¼ cup of olive oil and brush the eggplant all over with it.

Season the eggplant

Season the eggplant by sprinkling it with the coriander, cayenne and salt to taste.

Grill

Place the eggplant on the grill and cook for 10-12 minutes, turning once halfway through.

Make the dressing

Place the mint, chilis, lemon juice, vinegar, olive oil, and a pinch or two of salt (to taste) in a bowl. Mix well until fully combined. Check seasoning and add more salt if necessary.

Dress the tomatoes

Add the tomatoes to the bowl of dressing and stir well to combine.

Prepare yoghurt drizzle

Mix the yogurt and milk together in a separate bowl or small jug.

Serve

To serve, place the eggplant on a large serving platter. Top with the tomatoes and drizzle over the yoghurt mixture. Sprinkle some fresh chopped mint on top to garnish.
