For salad

- ¼ cup Greek yogurt
- 2 tbsp Milk
- Fresh mintto garnish

This Cayenne Grilled Eggplant with Fresh Tomato Salad tastes soooooo good, you will be looking for excuses to make it! Eggplant is one of those vegetables: it’s super versatile. It carries flavors well and it tastes wonderful when it is grilled with smokey char lines. I love to experiment with eggplant and different flavor combinations – and I find that this one really works well!
In this recipe, I combine the grilled eggplant with tomatoes dressed in a mint leaf, chili and lemon juice vinaigrette. I use one of my favorite serving platters to assemble this really delicious and healthy salad. Just before I bring this to the table, I drizzle some yoghurt on top and sprinkle with fresh mint leaves. If I want to make this vegan, I simply omit the yoghurt drizzle – it still tastes absolutely amazing!
