This Celery Soup is a fresh and light, springtime delight! A healthy, blended soup recipe made from celery, potato and onion thickened with butter, chicken broth and heavy cream.
I add ¼ cup of fresh dill for a strong, yet not overpowering, flavor addition. I could eat bowls of this soup especially with some extra crispy, warm and toasty, French baguette.
To make Celery Soup, you will need the following ingredients:
In a medium saucepan over medium heat, toss 1 head of chopped celery stalks, 1 chopped potato and 1 chopped onion with ½ cup of unsalted butter and a touch of salt. Cook for about 8-10 minutes until the onion is softened.
Pour in 3 cups of chicken broth and simmer for about 8-10 minutes until the potatoes have softened.
Transfer to a food processor and add ¼ cup of fresh dill.
Blend until smooth and puréed. Strain.
Pour in ½ cup of heavy cream and stir to mix through evenly.
Garnish with celery leaves, sea salt and a drizzle of oil, for serving.

Wasn't too sure I'd like this due to the appearance I had a feeling the taste would be kinda grainy and even chunky which I hate when it comes to soup but it turned out quite smoothe.
I went ahead and added some carrots into this and a few more spices.
