Steps to make Grilled Cheese and Red Cabbage Sandwiches

Cook cabbage

In skillet over medium heat, heat 3 tablespoon oil and add 4 cups thinly sliced cabbage. Cook for about 5 minutes until softened.

Add sauce ingredients

Add 3 tablespoons apricot preserves, 3 tablespoons cider vinegar and a pinch of crushed red pepper. Stir to combine then cook for 4 minutes until liquid is absorbed.

Prepare sandwiches

Spread mustard on 4 slices of bread and horseradish on the 4 remaining slices. Divide cooked cabbage between 4 slices of bread and top with cheese slices then close with remaining slices of bread.

Cook sandwiches

Brush outside of the sandwiches with remaining 1 tablespoon olive oil and transfer to a large skillet over medium heat. Cook for about 4 minutes per side until cheese has melted.

Serve immediately!
