With this Cheesy Ground Beef Soup, I am taking soup up a level! I’ve had cheese in soups in the past, but I can’t believe I never tried putting ground beef in a soup before. Wow – it tastes amazing! I recommend that you brown the beef for extra flavor before adding it to the pot!
To make this, I start by sautéing onions in olive oil. Then add the veggies and broth and simmer for about 15 minutes. While the soup is simmering, make a roux which will be used to thicken the soup. Add the ground beef and cheese and once it melts, you are ready to tuck in to this amazing wholesome meal!
To make this Cheesy Ground Beef Soup, you will need the following ingredients:
Heat the olive oil in a large soup pot or Dutch oven. Sauté the onions for 1-2 minutes.
Add the carrot, celery, potatoes, and vegetable broth. Stir well. Place a lid on the pot and simmer for 15 minutes.
Heat a pan over medium heat. Melt the butter in the hot pan. Stir in the flour and stir constantly while gradually adding the milk. Let the sauce thicken for 2 minutes over the heat.
Stir the sauce into the soup.
Add the ground beef to the soup and season to taste with salt and pepper.
Mix in the grated cheese. Remove the soup from heat once the cheese melts.
Garnish with freshly chopped parsley and enjoy!
