To make Chicken and Strawberry Salad, you will need the following ingredients:
In a small bowl, whisk together the sugar, red wine vinegar, water, salt and black pepper, to prepare the dressing. Slowly drizzle in the oil, constantly stirring to combine well.
Toss the romaine, arugula, strawberries, red onions and chicken, gently, until well mixed.
For serving, dish 2 cups of the chicken mixture onto each plate and top each salad with the cashews and blue cheese.
Drizzle 4 teaspoons of the remaining dressing over the top of each serving. Enjoy!
