I always think of this Chickpea Carrot Salad Sandwich when I am in the mood for a healthy but filling lunch. It is delicious and full of flavor and the chickpeas will keep you feeling full until dinner time. My tip to you is to make sure you use toasted bread as the sandwich filling is quite wet so untoasted bread will become soggy!

To make this sandwich, start by mashing chickpeas in a small bowl. Add the veggies followed by mayo, mustard, salt, and pepper and mix thoroughly. Toast two slices of whole grain bread. Spoon a generous helping of the chickpea filling onto one slice and cover with the second slice. This delicious sandwich only takes 10 minutes to make, leaving you free to relax for the rest of your lunch break.
