Ingredients

For the dressing:

2 tbsp Grainy mustard
2 tbsp Honey
2 Lemon zested and juiced
Salt
Black pepper
For the salad:
1 lb Chicken Breast boneless, skinless, divided into 4 4-oz portions
1 14-oz can Chickpeas drained and rinsed
1 tsp Olive oil
½ tbsp Chili powder
Salt to taste
Black pepper to taste
1 head Cauliflower cut into florets
1 Apples sliced thin
1 cup Parsley minced fresh
1 cup Fresh mint minced
2 Avocado pitted and cut into chunks

This Chickpea Salad with Chicken, Apples, & Avocado is a filling and delicious salad which is jam-packed with delicious ingredients like tender chicken, crunchy & spicy roasted chickpeas, crisp and juicy apples and smooth, creamy avocado.

Start by making the dressing for the salad. Cook chicken and chickpeas in the oven until the chicken is cooked through and the chickpeas are crisp and golden brown. Make cauliflower rice in the food processor. When you are ready to serve, mix all of the salad ingredients together and pour the dressing over the salad. If you’re preparing the salad in advance, don’t add the dressing or cut the avocado until just before you serve.

Heat oven and prepare a baking sheet

Preheat the oven to 400 °F. Line a rimmed baking sheet with foil.

Make dressing

Mix â…“ cup olive oil, 2 tablespoons each of grainy mustard and honey, and the zest and juice of 2 lemons in a mason jar with salt and pepper to taste.

Coat chicken in dressing

Drizzle ÂĽ of the dressing over the chicken to coat. Place the chicken breasts on the baking sheet.

Prepare chickpeas

Mix 1 can of chickpeas with 1 teaspoon of olive oil, ½ a tablespoon of chili powder, and salt and pepper to taste. Place the coated chickpeas on the baking sheet with the chicken and make sure everything is spread out in a single layer.

Bake

Bake the chicken and chickpeas in the oven for 25 minutes until the chicken is cooked through and the chickpeas are crispy and golden brown.

Make cauliflower rice

Pulse the cauliflower florets in a food processor in batches until they look like rice. Season to taste with salt and pepper.

Assemble salad

Place the cauliflower rice, crispy chickpeas, chicken, apples, avocado and fresh herbs in a large salad bowl. Toss well and pour over the dressing. Mix again.

Serve

Serve immediately in 4 individual salad bowls.
