Chile Verde Tofu and Rice is such a quick and easy dish to whip up. The best thing about it is that everything goes into the rice cooker at the same time so you can take care of some other household chores as your dinner cooks!
As I mentioned, to make this dish, all you have to do is place all the ingredients in your rice cooker. Stir to combine the ingredients and turn the cooker to the white rice setting. Cook until the cooker switches to “keep warm” mode. Serve and enjoy!
To make my Chile Verde Tofu and Rice, you will need the following ingredients:
Place the rice, water, beans. tofu, chiles, onion, salt, black pepper and cayenne in a rice cooker. Stir well.
Close the lid of the rice cooker and use the “white rice” setting.
Cook the until the cooker switches from “cook” to “keep warm”.
Serve immediately with some freshly chopped herbs sprinkled on top.

Can't get any better than some Chile tofu and rice, I used brown beans instead of pinto, was good.
Added some additional spices to mine to make it have a kick like some hot sauce and a bit of paprika spice on the top.
Love anything with tofu and this chille verde really hits the spot for me.
