These mini Coffee Meringues bring coffee and sweetness together in a perfect little bite size treat. If you’re a coffee lover then you’re definitely going to love these little pieces. Made with just egg whites, sugar, coffee granules, a drop of vanilla and a pinch of salt, the secret to baking the perfect meringue is a low heat temperature used on the oven setting.

A perfect party idea or sometimes I just make a few, place them in a cookie jar, for a delicious grab-n-go coffee treat.

Steps to make Coffee Meringues

Preheat oven and prepare baking sheets

Preheat the oven to 250 °F and line 2 baking sheets with some parchment paper.

Beat egg whites

In a large mixing bowl, use electric beaters to whisk, 4 large egg whites on a high speed for 4-5 minutes.

Add sugar

Gradually add 1 cup of sugar by a tablespoon at a time while continuously beating on a medium-high speed for about 10-12 minutes until the mixture is glossy and stiff peaks form.

Add coffee and vanilla

Use a spatula to fold in 3 tablespoons of coffee granules and 1 teaspoon of vanilla extract until combined into a stripy-like mixture.

Pipe meringues

Fit a pastry bag or ziploc bag with a large piping tip and roll down the top a few times. Carefully transfer the meringue from the mixing bowl to the piping bag. Unroll the cuff and twist the top a few times, and push meringue into the bottom of the bag. Once filled squeeze about 1½-inch circles of meringue onto the cookie sheets.

Cook meringues

Bake in the preheated oven for 2 hours. Then, turn the oven off and leave the oven door partially open, baking the meringues with no heat for one additional hour.

Serve

Carefully peel and remove meringues from the baking sheets. If they are still sticky, return them to the oven for another 30 minutes to finish drying out. Cool completely and store in an airtight container or serve and enjoy!
