It is not often that I am not home to prepare dinner but on odd occasions this Crockpot Balsamic Chicken and Vegetables dinner recipe definitely comes in handy.
All you need to do is throw in all the deliciously, well suited ingredients, gently mix everything together and turn the crockpot to cook for you on a low setting. Ready in 4 hours and you don’t even need to be around to make it happen!
To make Crockpot Balsamic Chicken and Vegetables, you will need the following ingredients:
In a mixing bowl, whisk balsamic vinegar, honey, dijon mustard, sriracha, Italian herbs, sea salt, black pepper and chili flakes, if using, until combined.
Add chicken, carrots, potatoes, sliced onions and minced garlic to the crockpot.
Pour sauce over the chicken and vegetables. Toss once or twice to get the sauce moving around.
Cook on the low setting for 8 hours or high setting for 4 hours until chicken is cooked and vegetables are tender.
Serve hot with a side of rice and enjoy!
