In a bowl, combine 1½ cups all-purpose flour, 2 tablespoons coconut sugar, 1 teaspoon baking powder and mix.

Add 3 tablespoons oil, 1 cup almond milk, 1 cup sparkling water, and 2 teaspoons vanilla extract, mix until smooth. Allow the dough to rest on the countertop for 10 minutes.

Cook crepes

In a non-stick crepe pan on medium heat, heat some oil and pour in a ladle of batter, then swirl to cover the base. Cook until set and the edges start to curl, about 45 seconds to 1 minute. Then flip and cook for another 45 seconds. Repeat with the remaining batter. Keep the crepes warm under a kitchen towel or in a warm oven.
