These Duchess Baked Potatoes are the most delicious potato side dish! It is a perfect dish to serve with your Thanksgiving dinner or at any time of the year for that matter! This dish can be assembled a day ahead of cooking. Simply cover and chill until you are ready to cook. If you prepare this dish in advance, increase the baking time by 5–10 minutes.

This side dish couldn’t be easier to make either. Start by cooking and cooling potatoes. Combine egg yolks with garlic, cream, sour cream, butter, and peppercorns and season generously with salt. Peel the potatoes and pass them through a ricer or a food mill directly into the bowl with the egg mixture. Fold the potatoes in gently, taking care not to overmix. Transfer the mixture to a baking dish and decorate the top. Bake in the oven until golden brown. Enjoy!

Cook potatoes

Place 6 potatoes in a large pot. Pour in water until the potatoes are covered by 2 inches. Season with salt and bring to a boil over medium-high. Reduce heat. Simmer for 25–35 minutes until the potatoes are tender when pierced.

Drain potatoes

Heat the oven to 425 °F.

Combine eggs and other ingredients

Place 3 large egg yolks, 1 finely grated garlic clove, ¾ cup of heavy cream, ¼ cup of sour cream, 5 tablespoons of melted unsalted butter, and ½ a teaspoon of ground peppercorns in a large bowl. Whisk together and season generously with salt.

Peel the cooled potatoes and pass the potato through a ricer or a food mill straight into the bowl with egg mixture.
