Ingredients

For the waffle:
one 15-oz can Chickpeas rinsed and drained
â…“ cup Vegetable oil plus more for waffle iron
½ bunch Cilantro fresh
½ Red onion halved
2 tbsp All-purpose flour
1 tsp Baking powder
1 tsp Onion powder
1 tsp Garlic powder
½ tsp Za’atar
2 Egg whites
1 large Garlic clove
Juice of ½ a Lemon
For serving:
Hummus flavor of your choice
Cherry tomatoes halved
Cucumber quartered
Labneh or plain yogurt
assorted Pickles
2 Eggs hard-boiled

This Falafel Waffle recipe is like my healthy fast food! I love falafel, but I always mess it up when I make traditional falafel at home. Not this falafel waffle recipe though – it is quick, easy and foolproof. You don’t need any hot oil too which means less mess and less chance of burning yourself!

To make this falafel waffle, start by mixing all the waffle ingredients in a food processor. Heat a waffle iron and grease with cooking spray. Place the falafel mixture in the hot waffle iron and cook for 5-6 minutes until golden brown and set. Repeat with the remaining mixture. Serve these waffles with some of your favorite toppings like cherry tomatoes, cucumber, labneh or yogurt, pickles and hard-boiled eggs.

Make the falafel mixture

Place the 15-ounce can of chickpeas in the bowl of a food processor with ⅓ cup of vegetable oil, ½ bunch of fresh cilantro, ½ a red onion, 2 tablespoons of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of onion powder, 1 teaspoon of garlic powder, ½ teaspoon of za’atar, 2 egg whites, 1 large garlic clove and the juice of ½ a lemon and puree until smooth.

Heat waffle iron

Turn the waffle iron on to the lowest setting and spray with cooking oil.

Place falafel batter in waffle iron

Spoon the falafel mixture into the waffle iron.

Close the waffle iron and cook the waffle for 5-6 minutes until set and golden brown.

Repeat

Repeat with any remaining falafel mixture.

Serve with hummus and your favorite toppings such as cherry tomatoes, cucumber, labneh or yogurt, pickles and hard-boiled eggs.
