I really love this Fried Millet with Brussels Sprouts as an alternative to fried rice. I use all my favorite fried rice ingredients. The only thing I change is that I substitute millet for rice. Millet is a high protein, healthy whole grain which tastes delicious.
In this recipe I start by sautéing the Brussels sprouts and garlic in olive oil. I add the millet, soy sauce and rice wine vinegar. Just before the end of the cooking process, I create a well in the center of the fried millet and I crack in two eggs. I wait until the eggs are almost set before stirring them through the millet. I serve this with sesame seeds.
To make my Fried Millet with Brussels Sprouts, you will need the following ingredients:
Place 1 tablespoon of olive oil in a skillet and heat over medium heat.
Add 3 cups of quaterted Brussels sprouts to the skillet and cook for 6 - 8 minutes until they are golden brown.
Stir in 1 minced clove of garlic and cook for another minute.
Stir in 2 cups of cooked millet. Add 3 tablespoons of soy sauce and 1 tablespoon of vinegar and cook while stirring for 2 - 3 minutes.
Make a well in the center of the millet and crack in 2 large eggs. Leave the eggs sit in the well until almost fully set. After 3-4 minutes, stir the eggs into the millet mixture.
Stir in 2 tablespoons of sesame seeds and serve.
