8 tbsp Unsalted butter melted
4 cloves Garlic peeled and minced
1 tbsp Fresh thyme chopped, plus some more for garnish
1 tbsp Kosher Salt
¼ cup Parmesan cheese grated, plus more for serving

These Garlic Parmesan Crispy Roasted Potatoes with Thyme are one of my favorite side dishes. I use a black cast iron skillet to make my crispy potatoes and it makes a sensational looking side dish when entertaining friends. Try these potatoes soon – you will never look back!

Start by thinly slicing potatoes using a sharp knife or a mandolin – you will need very thin slices. I use Yukon Gold potatoes for this dish, but you can use your favorite roasting potatoes. Arrange the potato slices in a buttered skillet and pour over the remaining butter. Season and sprinkle with thyme and garlic. Cook for an hour and enjoy!

Steps to make Garlic Parmesan Crispy Roasted Potatoes

Preheat the oven

Heat your oven to 375 °F.

Grease skillet

Take 2 tablespoons of the melted butter and use it to brush the bottom of a skillet or baking dish.

Add potato slices

Arrange the potato slices in the skillet or baking dish. Insert them vertically but at a slight angle in a circular pattern. Fill the dish completely with the potatoes.

Add butter and season

Drizzle the remaining 6 tablespoons of melted butter over the potatoes in the skillet. Sprinkle with a tablespoon of thyme, a tablespoon of salt and 4 minced cloves of garlic.

Roast

Cook the potatoes for about 50-60 minutes in the preheated oven until the top edges of the potatoes are crisp.

Top with Parmesan and continue cooking

Remove the potatoes from the oven and sprinkle with ¼ cup of Parmesan cheese. Return to the oven and bake for 10 more minutes until the cheese melts and is a light golden color.

Leave to rest

Leave the potatoes to rest for about 10 minutes before serving.

Serve as a side dish with your favorite meal.
