1 pound Pork loin boneless , cubed
1/2 cup All-purpose flour
1 1/2 tbsp Peanut oil
1/4 cup Chicken broth
1/4 cup Water
2 tbsp Soy sauce
1 tbsp Sherry
2 tbsp Green onion thinly sliced
1 clove Garlic minced
1 tsp Sugar
1 tsp Ground ginger
to taste Salt
to taste Black pepper

    Ginger Pork

    My grandmother used to make Ginger Pork for me when I visited her as a child. I still remember the cubed pork and the tasty gingery sauce. She would serve it in a bowl over white steamed rice. I would each all the pork and rice and I would noisily slurp the last of the sauce from the bowl. Some days, I just crave this comfort food so I came up with my own take on her recipe.

    In my recipe, I cook some pork cubes. Then I prepare the sauce by combining the broth, water, soy sauce and sherry before adding onion, garlic, sugar, ginger, salt, pepper. This easy dish is a wholesome taste of my childhood! It makes enough for four people but you can easily double the recipe if you need to.

    Steps to make Ginger Pork

    Prepare the pork

    In a large resealable food bag, place the pork cubes and flour. Seal the bag and shake vigorously until the pork is fully coated.

    Heat oil

    Heat the oil in a large wok or pan.

    Cook the pork

    When the oil is hot, add the pork and brown quickly. Remove from the wok with a slotted spoon and set to one side. Pour the remaining oil from the wok.

    Make the sauce

    In same wok or pan, mix the chicken broth, water, soy sauce and sherry together.

    Add remaining ingredients

    Stir in the green onion, garlic, sugar, ginger, salt, pepper and pork cubes.

    Once you have brought the sauce to a boil, turn the heat down low and cover. Allow the sauce to simmer until pork is tender (about 15 minutes).

    Check occasionally

    If the sauce thickens too much while simmering, add more water until it is at your desired consistency.

    This ginger pork is great served over steamed white rice.
