I love to make this Green Bean Salad with Feta for barbecues or summer cookouts. The combination of crisp tender green beans and creamy salty feta cheese is a winner with everyone! This salad is a great accompaniment for grilled fish or meat.

To make this salad, I start by cooking green beans until crisp-tender. Make a dressing from shallots, garlic, Dijon, vinegar, salt, and pepper and olive oil. Combine the cooked green beans with tomatoes and walnuts. Crumble over feta cheese and serve at room temperature or slightly warmed.

    Bring a large pot of salted water to a boil and add green beans. Cook the green for about 3 minutes until crisp-tender. Once cooked, transfer the beans to a bowl of ice water to stop cooking. Drain and set aside to cool.
