Recipe Description

I like to make this Ham & potato hash with baked beans & healthy ‘fried’ eggs when I am trying to be a bit healthier.  Instead of frying the eggs in oil, they are cooked in a frying pan with water making them like a cross between a poached and a fried egg. I think I prefer this “poa-fried” egg more than normal fried eggs.

For this dish, I recommend using a cast iron frying pan which can be placed in the oven so that it cuts down on washing up. Start by cooking the leeks before adding the ham and potatoes.  Bring the hash together with egg and mustard and bake the whole thing in the oven. Serve with a healthy fried egg and some heated beans.

    Heat the oven

    Preheat the oven to 360 °F.

    Cook the potatoes

    Place the potatoes in a large pan of salted boiling water and cook for 5 minutes until they are just tender. Drain in a colander and set them to one side to steam dry.

    Fry the leeks

    Lightly spray an ovenproof frying pan with cooking spray. Add a dash of water and fry the leeks until they are very soft.

    Spray some more of the oil into the pan and add the potatoes and the ham. Fry for a few minutes until the ham crisps up a little.

    Add the mustard, egg and seasoning

    Add the mustard, egg and season well to taste. Using a fork, stir the mixture and break up some of the potatoes roughly as you do.

    Bake in the oven

    Flatten the mixture down and spray some of the low cal oil on top. Bake in the oven for 15-20 mins until the top is crispy.

    “Fry” the eggs

    When the hash is nearly ready, heat some water in a non stick frying pan with a lid. Crack the eggs into the water when it is steaming, but not simmering. Cook for 2-4 minutes depending on how you like your eggs.

    Heat the beans according to the instructions on the can.
