1 cup Chickpeas dried chickpeas, soaked overnight (don't use canned chickpeas)
½ cup Onion roughly chopped
2 cups Cilantro or parsley, roughly chopped
1 Chili pepper small green, serrano or jalapeno pepper
3 Garlic clove
1 tsp Cumin
1 tsp Salt
½ tsp Ground cardamom
¼ tsp Black pepper
2 tbsp Chickpea flour or gluten free flour
½ tsp Baking soda
Avocado oil for frying

Healthy & Delicious Baked Falafel is the best vegan falafel recipe I’ve found! It’s an authentic falafel recipe that you can easily make at home! The best thing about this falafel recipe is that you can achieve crispy, soft and delicious falafels by baking!

Start the night before by soaking chickpeas in water. Drain the water from the chickpeas and place them in a food processor with onion, parsley, cilantro, pepper, garlic, cumin, salt, cardamom, and black pepper. Transfer the mixture to a bowl and add chickpea flour and baking soda and mix well. Cover the bowl and refrigerate. Shape the mixture into balls. If the mixture is too wet, add another tablespoon of chickpea flour. If it’s too dry and crumbly, simply add a teaspoon or two of water or lemon juice. Bake in the oven and serve immediately with tahini sauce on the side.

Soak chickpeas

Place 1 cup of dried chickpeas in a bowl and cover with water. Leave to soak overnight.

Drain chickpeas

Drain and rinse the chickpeas.

Make the falafel mixture

Place the drained chickpeas in the bowl of a food processor with ½ a cup of roughly chopped onion, 2 cups of roughly chopped cilantro (or parsley),
1 small green chili pepper, 3 garlic cloves, 1 teaspoon of cumin, 1 teaspoon of salt, ½ a teaspoon of cardamom, and ¼ teaspoon of black pepper. Blend until the mixture has the texture of rough sand.

Add flour and baking soda

Transfer the falafel mixture to a bowl. Add 2 tablespoons of chickpea flour and ½ a teaspoon of baking soda. Stir well. Cover and chill in the refrigerator for 30 minutes to one hour.

Heat oven and prepare a baking sheet

Preheat the oven to 425 °F. Lightly spray or brush a baking sheet with oil.

Shape falafels

Shape the mixture into patties or balls using your hands or an ice cream scoop.

Place the falafel patties on the baking sheet. Spray or brush the top of the patties with oil and bake for 25-30 minutes, turning once halfway through.

Serve immediately with tahini sauce.
