
Healthy & Delicious Baked Falafel is the best vegan falafel recipe I’ve found! It’s an authentic falafel recipe that you can easily make at home! The best thing about this falafel recipe is that you can achieve crispy, soft and delicious falafels by baking!
Start the night before by soaking chickpeas in water. Drain the water from the chickpeas and place them in a food processor with onion, parsley, cilantro, pepper, garlic, cumin, salt, cardamom, and black pepper. Transfer the mixture to a bowl and add chickpea flour and baking soda and mix well. Cover the bowl and refrigerate. Shape the mixture into balls. If the mixture is too wet, add another tablespoon of chickpea flour. If it’s too dry and crumbly, simply add a teaspoon or two of water or lemon juice. Bake in the oven and serve immediately with tahini sauce on the side.

Place the drained chickpeas in the bowl of a food processor with ½ a cup of roughly chopped onion, 2 cups of roughly chopped cilantro (or parsley),
1 small green chili pepper, 3 garlic cloves, 1 teaspoon of cumin, 1 teaspoon of salt, ½ a teaspoon of cardamom, and ¼ teaspoon of black pepper. Blend until the mixture has the texture of rough sand.
