The recipe is easy to make, but here are a few helpful tips before you start cooking. First things first: What kind of potatoes are best for this recipe? I find Russet potatoes work well here. As you slice the potatoes and then cut out the heart shapes, place them in a bowl of water to prevent them from turning brown. The key to getting the crispy, golden surface on your roasted potatoes is to parboil the potatoes first, which means to simmer them in boiling water until just tender. Don’t let them simmer too long though. You will need a mini heart-shaped cookie cutter for this recipe. You want it to be metal that is sturdy enough to cut through potato slices without breaking.
To make the Heart-Shaped Roasted Potatoes, you will need the following ingredients:
Preheat the oven to 400 °F and line a large baking sheet with aluminum foil.
Peel 4 potatoes and cut each into about ¼-inch thick slices. Place the potato slices in a bowl and cover with cold water.
Use a mini heart-shaped cookie cutter to cut out as many hearts as you can. Place the potato hearts in a bowl of water to prevent them from turning brown. Reserve the scraps in water for mashed potatoes.
In a large pot, bring 6 to 8 cups of salted water to a boil over high heat. Once at a boil, reduce the heat and add the potato hearts. Cook for 3 minutes to parboil. Drain well.
Transfer the drained potatoes to a large bowl and add 2 tablespoons olive oil, 1 teaspoon salt, ½ teaspoon ground black pepper, 1 teaspoon garlic powder, ¼ teaspoon paprika, and roughly chopped rosemary leaves. Toss to coat evenly.
Arrange the potatoes on the prepared baking sheet in a single layer and roast for 15-18 minutes or until golden brown and crispy.
Garnish with fresh rosemary leaves and serve with a dipping sauce of choice!
