As you slice the potatoes and then cut out the heart shapes, place them in a bowl of water to prevent them from turning brown. The key to getting the crispy, golden surface on your roasted potatoes is to parboil the potatoes first, which means to simmer them in boiling water until just tender. Don’t let them simmer too long though. You will need a mini heart-shaped cookie cutter for this recipe. You want it to be metal that is sturdy enough to cut through potato slices without breaking.
