Using the side of a knife, mash 1 teaspoon of garlic and a pinch of salt together to form a paste.
In a medium bowl, combine the garlic paste with 1 tablespoon of oil, 2 teaspoons of vinegar and a pinch of pepper.
Dress the baby kale with the dressing.
Top the kale with ½ a cup of quinoa, ½ a cup of sliced strawberries and 1 tablespoon of pepitas.
