⅓ cup Olive oil

Black pepper crushed, to taste

First, prepare the lemon sage marinade using a blender or food processor. Rub the marinade all over the chicken thighs ensuring they are well covered. Save a few tablespoons of the prepared marinade. Reserving a small amount of the marinade for brushing the cooked chicken is optional, though very delicious. Put the chicken in the fridge to marinate for 20 minutes and up to 2 hours. Before cooking the chicken thighs, bring them out of the fridge a few minutes earlier to get them to room temperature. When ready to cook, preheat the oven. Meanwhile, heat an oven-safe skillet and quickly brown the chicken thighs along with the sliced onions. Remove the skillet from heat and add the olives around the chicken. Top the chicken with lemon slices and roast in the oven for about 25 minutes. Broil the last 2-3 minutes to create a crispy outside. Let rest for 8-10 minutes before serving, and enjoy.

Steps to make Lemon Chicken Thighs


Prepare marinade


In a food processor, combine 2 tablespoons chopped fresh sage, 2 tablespoons lemon juice, 1 teaspoon minced garlic, ½ teaspoon onion powder, ⅓ cup olive oil, ¼ teaspoon kosher salt, crushed black pepper to taste, ¼ teaspoon paprika, 1 tablespoon Dijon mustard, and 1 teaspoon lemon zest.




Blend until creamy and smooth.


Marinate chicken


In a large bowl, place 4 skinless chicken thighs and pour the prepared marinade over. Reserve a small amount of marinade for brushing the chicken, once baked. Put the chicken in the fridge to marinate for 20 minutes and up to 2 hours.


Preheat oven

When ready to cook, preheat the oven to 400 °F.


Brown chicken


In an oven-safe skillet, brown the marinated chicken and sliced onions on medium-high for 3 to 5 minutes, flipping the chicken once through cooking. Remove from heat.


Add olives and lemon slices


Add the pitted olives around the chicken and top the chicken with lemon slices. Season with black pepper to taste.




Roast the chicken thighs for 25 - 30 minutes, checking the internal temperature at 20 minutes. Broil the last 2-3 minutes to create a crispy outside. Once ready, remove from the oven and let rest for 8-10 minutes before serving.



Brush the roasted chicken with the reserved marinade, if you wish, and serve.
