These Marshmallow Popcorn Balls are a bit like rice krispie squares but with popcorn if you know what I mean! I love to make these with my kids. They are so much fun in the kitchen (if you don’t mind things getting a bit sticky that is!).

Start by mixing marshmallows and popcorn in a large bowl. Bring syrup, butter, water, sugar and marshmallows to a boil in a saucepan and add vanilla and salt. Mix with the marshmallows and popcorn. Once cool enough to touch, shape the popcorn balls using your fingers. To prevent your hands/fingers from sticking to the popcorn mixture, butter them before starting. Customize the popcorn balls for any holiday using food coloring or sprinkles.

Steps to make Marshmallow Popcorn Balls

Prepare workspace

Place a sheet of parchment paper or wax paper on your workspace.

Mix marshmallows and popcorn

Toss 4 cups of the marshmallows together with 12 cups of popcorn in a large bowl and set aside.

Heat syrup, butter, water, sugar and marshmallows

Heat ¾ cup of light corn syrup, ¼ cup of unsalted butter, 2 teaspoons of water, 2½ cups of powdered sugar and the remaining 1 cup of marshmallows in a saucepan over medium high heat. Heat while stirring continuously until the mixture comes to a boil.

Add vanilla and salt

Remove the saucepan from the heat and whisk in vanilla and salt quickly.

Add sugar syrup to popcorn

Pour the sugary syrup mixture over the popcorn and marshmallows. Stir carefully to coat the popcorn kernels evenly.

Shape into balls

Once cool enough to touch but still sticky enough to hold a shape, shape the popcorn into 3-4-inch balls. Buttering your hands/fingers will keep popcorn mixture from sticking to you too much.

Store

If any of these popcorn balls are leftover, they will keep for up to 5 days if wrapped in cellophane.
