Recipe Description

Meat Loaf Cake for Two is a hilarious April Fool’s Day dinner. It is a meat loaf with potato “frosting” which resembles a carrot cake! I literally cannot get enough of these April Fools Day recipes. I love to bring an element of fun to my cooking and this is one of the best times of year for having fun in the kitchen!

For this meat loaf “cake”, you simply need to make two meat patties by combining beef with carrot, oats, milk, Worcestershire sauce, garlic, salt and pepper. To make the “frosting” puree potatoes and use this to sandwich the cooked patties together. Coat the outside of the “cake” with potato. Pipe tinted cream cheese with pesto on top and coat the sides with toasted breadcrumbs. Enjoy!

    Place 1 small shredded carrot, 3 tablespoons of oats, 2 tablespoons of milk, 1 teaspoon of Worcestershire sauce, 1 minced garlic clove and a ¼ teaspoon each of salt and pepper in a small bowl. Break up ½ a pound of ground beef into the bowl and mix well. Shape the mixture into two 1 inch thick patties.

    Place the burgers under a broiler or on a grill and cook for 6-8 minutes on each side until the juices run clear (a thermometer inserted should read 160°F).

    Cook potatoes

    Place 2 medium potatoes in a small saucepan, covered with water. Bring to a boil and reduce heat. Cover the saucepan and continue to cook for 10-15 minutes until tender. Drain well.

    Press the cooked potato through a potato ricer into a small bowl. Pour in 3 tablespoons of milk and season with ⅛ teaspoon each of salt and pepper.

    Place one of the grilled patties on a serving plate. Spread ¾ of a cup of the potato puree over the top. Place the second pattie on top and spread the remaining potato puree over the top and sides of the “cake”.

    Toss 2 tablespoons of cream cheese and 1 teaspoon of pesto in a small bowl. Spoon the creme into a piping bag and decorate the top of your “cake” with swirls.
