1 head Romaine lettuce trimmed and finely chopped
6 Radishes halved or sliced
For garnish:
Parmesan cheese
Chickpeas Roasted
Sea salt to taste
Black pepper to taste
For the Lime Dressing:
2 tbsp Lime juice

¼ tsp Salt
4 tbsp Olive oil

This particular salad is a combination of Romaine lettuce, microgreens and radishes in a lime dressing and topped with roasted chickpeas and Parmesan shavings. Simple yet powerful flavors.

Steps to make Microgreens Salad with Roasted Chickpeas

Prepare salad

In a large serving bowl, combine 1 head of trimmed and finely chopped romaine lettuce, 1 package of microgreens and 6 sliced or halved radishes. Set aside in the refrigerator until ready to serve.

Prepare dressing

In a small bowl, whisk 2 tablespoons of lime juice with ⅛ teaspoon of dry mustard powder, ¼ teaspoon of salt and 4 tablespoons of olive oil until well combined.

Serve

Toss the prepared salad with the prepared lime dressing, right before serving and season with some extra sea salt and freshly ground black pepper. Garnish with sprinkles of Parmesan shavings and roasted chickpeas.

Bit dry in my opinion so would recommend a tad bit of vinegar or even olive oil on the top.
