I’m a huge fan of international recipes and this Middle Eastern Braised Cauliflower is one of my best experiments. When traveling home, I often do a stopover somewhere between Israel and the UAE and I just needed to bring these flavors back with me to the US.
Tender, cauliflower florets, gently braised with tomatoes, shallots and garlic and seasoned with marjoram, cumin, coriander, allspice and a pinch of salt. Enjoy this as a tasty snack, a first course complementary or even as a side dish to another Middle Eastern favorite. You’ll love it!
To make Middle Eastern Braised Cauliflower, you will need the following ingredients:
In a large skillet over medium heat, heat 2 tablespoons oil and add the shallots and garlic. Cook, stirring often, for about 4-5 minute until the shallots are soft and translucent.
Add the fresh marjoram, cumin, coriander, salt and allspice and cook, stirring continuously for 15 seconds.
Add another tablespoon oil with the cauliflower and tomatoes and gently stir to mix. Cover skillet and cook for 10 minutes, stirring occasionally.
Remove the cover and continue cooking for 5-10 minutes, stirring occasionally, until the cauliflower has softened and the sauce has thickened.
Garnish with fresh marjoram and serve hot!
