To make Mint Yogurt and Sprout Cabbage Cups, you will need the following ingredients:
In a blender or food processor, add ¼ cup fresh mint leaves, ¼ cup cilantro leaves and 1 cup yogurt. Blend a few times until well combined then season with salt to taste and set aside.
In a large pot of boiling water, dip the head of cabbage for a few minutes, then gently and easily, the leaves should pull apart. Set aside.
In a non-stick pan, heat 1 tablespoon oil and add 2 cups roughly chopped paneer, 1 teaspoon cumin powder, 1 teaspoon chili powder and a pinch of salt to taste. Sauté for a few minutes until fragrant.
In a mixing bowl, toss paneer mix, 1 ear grilled corn kernels, 1 finely chopped red onion, 1 cup green gram sprouts, ½ cup freshly chopped cilantro and a pinch of salt to taste, together until well mixed.
Portion a few spoonfuls of the prepared paneer salad into the cabbage cups and drizzle a few squeezes of lemon juice over with a few teaspoons of herbed yogurt, to serve. Enjoy!

Mint was a really nice touch didn't even think about it to be honest but grateful I tried it out it blends really well.
So crunchy and fufilling this is one of the best cabbage cups recipes I've ever made.
The lime makes it kinda zesty and i'm LOVING it sooo tasty omg, going to make this snack again.
I used greek yogurt to make this and didn't add any mint cause I hate the taste. Doubled down on the chili powder and it was delicious.
