Ingredients

1 cup Yogurt plain organic
ÂĽ cup Fresh mint leaves
ÂĽ cup Cilantro fresh leaves
1 head Red cabbage parboiled and leaves removed
2 cups Paneer roughly chopped
1 tsp Cumin powder
1 tsp Chili powder
1 Ears of corn of organic grilled and kernels removed
2 Shallots or 1 medium red onion, finely chopped
1 cup Green gram Sprouts
½ cup Cilantro fresh , chopped
1 Lime wedges to drizzle on top
Sea salt to taste
1 tbsp Vegetable oil (coconut or sesame, grapeseed)

Steps to make Mint Yogurt and Sprout Cabbage Cups

Prepare herbed yogurt

In a blender or food processor, add ÂĽ cup fresh mint leaves, ÂĽ cup cilantro leaves and 1 cup yogurt. Blend a few times until well combined then season with salt to taste and set aside.

Boil cabbage leaves

In a large pot of boiling water, dip the head of cabbage for a few minutes, then gently and easily, the leaves should pull apart. Set aside.

Prepare paneer mix

In a non-stick pan, heat 1 tablespoon oil and add 2 cups roughly chopped paneer, 1 teaspoon cumin powder, 1 teaspoon chili powder and a pinch of salt to taste. Sauté for a few minutes until fragrant.

Prepare salad

In a mixing bowl, toss paneer mix, 1 ear grilled corn kernels, 1 finely chopped red onion, 1 cup green gram sprouts, ½ cup freshly chopped cilantro and a pinch of salt to taste, together until well mixed.

Serve

Portion a few spoonfuls of the prepared paneer salad into the cabbage cups and drizzle a few squeezes of lemon juice over with a few teaspoons of herbed yogurt, to serve. Enjoy!
