1 package Broccoli frozen chopped, thawed and drained
2 cups Mushrooms sliced
1 Onion small, chopped
2 cloves Garlic minced

My youngest daughter named these Mushroom, Broccoli and Cheddar Bundles and she says she chose the name because of the bundles of love she has for these pastry treats and they encourage her to eat her broccoli, so it works all around. Whatever gets my children to eat their vegetables is a winning recipe to me.

As the name suggests, this recipe bakes 32 individual pastries filled with broccoli, mushrooms, onions, garlic and of course melted Cheddar cheese, if this doesn’t sound like heaven to you, then you just have to try making a few and you’ll soon be convinced.

Steps to make Mushroom, Broccoli & Cheddar Bundles

Preheat oven

Preheat the oven to 400 °F.

Beat egg wash

In a small bowl, use a fork to whisk 1 egg and 1 tablespoon of water until combined.

Cook filling

In a 10-inch skillet over medium heat, heat 1 tablespoon of vegetable oil then add 1 package of thawed broccoli, 2 cups of sliced mushrooms, 1 chopped onion and 2 cloves of minced garlic. Cook until all the liquid has been evaporated then remove from the heat.

Add cheese

Stir in 1 cup of Cheddar cheese and mix until melted through.

Prepare pastry

Open 1 pastry sheet onto a lightly floured surface and roll into a 12-inch square then cut 16 by 13-inch squares. Repeat with remaining sheets until you have about 32 in total.

Fill pasty

Place 2 teaspoons of the cooked vegetable mix into the center of each square, brush the edges with the prepared egg wash and then fold the corners over the filling towards the center. Seal carefully then transfer to baking sheets and brush the outer pastry with more egg wash.

Bake

Bake in the preheated oven for about 15 minutes.

Serve

Transfer and cool the baked bundles on a wire rack for about 10 minutes then serve warm.
