Sometimes I love a good Mushroom Pie with French fries, gravy and special mushy peas that my grandmother taught me to make. It’s a delicious family meal that tastes just like grandma’s.
I use two layers of pastry, one on the bottom and one on the top and fill the middle layer with a cooked mushroom, onion and dill mix. The flavors are fresh and simple and perfect for a family dinner. If you’re not a French fry fan, mashed potatoes or a side salad work just as well.
To make Mushroom Pie, you will need the following ingredients:
In a large frying pan over medium heat, heat 50 ml vegetable oil and add 400 g of chopped mushrooms.
Add 1 peeled and chopped onion and continue cooking until soft and translucent.
Season with some salt and pepper and sprinkle with 25 g of finely cut dill. Set aside to cool to room temperature.
In a deep, large mixing bowl, whisk 500 ml of kefir with 1 teaspoon of baking soda until combined.
Add 1 teaspoon of salt, 1 tablespoon of sugar, 3 eggs and 250 g of whole-wheat flour and whisk to combine into dough.
Add the remaining 250 g of whole-wheat flour and mix thoroughly to combine.
On a stovetop or in the microwave, melt 50 g of butter and then pour into the dough. Give a final mix through to combine everything.
Pour half of the dough into a heat-resistant baking dish then top with the cooked and cooled mushrooms, evenly over. Cover the mushrooms with the remaining dough and garnish with some sprinkles of flax or sesame seeds.
Preheat the oven to 355 °F/ 180 °C.
Bake in the preheated oven for about 35-40 minutes until the pie is cooked and ready.
Cool slightly then slice and serve warm.
