1 Onion cut in quarters
15-20 cloves Garlic whole
1 tbsp Kosher Salt
1 tsp Black pepper ground
4 tsp Garlic powder or 5 cloves garlic crushed
½ tsp Ground paprika optional
3-4 tbsp Olive oil

My favorite thing at the moment is sheet pan dinners and this One Pan Chicken and Potatoes is one of my absolute favorites. Sheet pan meals are so simple to make and all of the ingredients cook at the same time in one pan which means less cleaning up to do after dinner!

To make this dish, start by placing washed and dried chicken, potatoes and carrots, onion and garlic on a lined rimmed baking dish. Sprinkle with salt, ground pepper, garlic and drizzle with olive oil. Toss everything to coat and place the baking dish in the oven. Bake until cooked through. Broil the chicken and potatoes for a few minutes if they are not brown and crisp enough. Watch carefully as they broil or they will burn! Believe me, I found out the hard way!

Steps to make One Pan Chicken and Potatoes

Heat the oven and prepare a baking pan

Preheat the oven to 375 °F and line a 12 x 18-inch rimmed baking sheet with parchment paper.

Prepare the veggies and chicken

Wash the potatoes and carrots and chop them into bite size pieces. Pat dry with a paper towel. Pat 8 chicken thighs with a paper towel until dry.

Place all ingredients on baking sheet

Place the chicken, potatoes, and carrots on the baking sheet with a quartered onion and 15-20 garlic cloves. Season with salt and ground pepper and 4 teaspoons of garlic powder. Drizzle 3-4 tablespoons of olive oil over the ingredients and toss carefully to coat.

Bake

Bake in the oven for 1 hour and 20 minutes. When the potatoes and chicken thighs are soft and easily pierced with a fork they are done.

Broil chicken

For the last 5 minutes of cooking, broil the chicken thighs and potatoes if they are not brown and crispy enough for you.

Serve

Serve immediately while hot.
