Preheat the oven to 400 °F.

Prepare vegetables for baking

In a roasting pan, add 1 sliced onion, 2 sliced leeks, and 10 ounces peeled and diced celery root. Add 1 tablespoon olive oil, season with salt and black pepper to taste and toss.

Season chicken

Meanwhile, season 4 chicken breasts with salt and freshly ground black pepper to taste from both sides and set aside.

Add beans and chicken

Add 1 chopped garlic clove, butter beans, 4 sprigs thyme, 5 ounces chicken stock and stir. Lay 4 seasoned chicken breasts on top.

Transfer to the oven and bake for 20 more minutes or until the internal temperature of the chicken breast reaches 165 °F.
