This One Pot Minced Beef Hotpot is one of my favorite British recipes to make in winter. It is a delicious, comforting bowl of goodness made with healthy root vegetables, minced beef, and topped with potato slices. The whole family will love this tasty recipe!
To make this delicious one-pot meal, sauté onions in a pot until tender before adding minced beef and browning all over. Add the chopped vegetables and flour. Next, pour in beef stock, Worcestershire sauce and horseradish sauce. Season and add peas before bringing to a boil and simmering for 5 minutes. Remove from the heat and arrange overlapping potato slices on top. Brush with melted butter or oil before replacing the lid and leaving to bake for 1 hour. Remove the lid and place under a hot grill until the potatoes start to turn golden brown.
To make my One Pot Minced Beef Hotpot, you will need the following ingredients:
Heat 3 tablespoons of oil in a large oven-proof pot or Dutch oven. Add onions and sauté for about 8 minutes until tender.
Push the onions to one side and increase the heat a little. Add the minced beef and cook until evenly browned all over.
Add another tablespoon of oil and add the diced rutabaga, chopped carrots, and chopped parsnips. Continue to cook for a few minutes, stirring occasionally.
Sprinkle 2 tablespoons of flour over the sauteed vegetables. Cook while stirring for 1 minute.
Preheat the oven to 355 °F.
Pour in 500 milliliters of beef stock, 4 dashes of Worcestershire sauce, and 1 tablespoon of horseradish sauce. Season and add peas. Bring the mixture to a boil and simmer for 5 minutes.
Remove from the heat. Arrange the sliced potatoes overlapping on top. Brush with 1 tablespoon of oil or melted butter.
Cook the hotpot in the oven for about 1 hour with the lid on.
Finish by removing the lid and broiling the potatoes for about 8 minutes until golden.
Serve as is or with fresh bread if you’re feeling hungry.
